Vegetable Bagel Sandwich
Ingredients:
4 whole wheat or other flavored bagels, cut in half Basil Mayonnaise (below) 4 slices Cheddar or Swiss cheese 1 cup alfalfa sprouts 4 thin slices ripe tomato 16 thin slices cucumber 4 thin slices red onion
Basil Mayonnaise
1/2 cup loosely packed basil leaves 1/8 cup mayonnaise (can be light variety) 1/4 tsp. minced garlic
Prepare mayonnaise by blending in food processor or blender until smooth. Spread bagel half with mayonnaise, 1 slice cheese, 1/4 cup alfalfa sprouts, 1 slice tomato, 4 slices cucumber, and 1 slice red onion. Top with remaining bagel half. Repeat this for the other bagels.
Note: This can also be made with pita bread or fresh wheat bread.
